Some of our “We Nevers” make me question our sanity. Not this one – there could be very little better than an afternoon learning about the history and benefits of chocolate and then making the real thing. The guy who taught us was clearly a chocolate nerd (and I mean that as a compliment). He had loved chocolate and over time had learned how to make the perfect chocolate – using the right cocoa butter, ground cocoa and wildflower honey.
The type of chocolate we were making was practically perfect. It had that really strong natural chocolate taste, not too sweet and definitely not waxy. The problem was the cook in this case (me) was far from perfect and obviously very inexperienced. I love sea salt chocolate so if a little is good, well then a lot must be great. Not surprisingly, it didn’t work out that way and I ended up with inedible chocolate. I will try again at home, remembering that a little salt goes a long way.
